Don’t blink, or you might miss this recipe

…because it’s fast. So fast.  Also, easy and inexpensive.  The trifecta.

Here are your ingredients:


a package of Italian sausage

a box of rotini

2 jars of sun-dried tomato pesto

1/2 to one cup of grated parmeason cheese

olive oil

I choose the Barilla Plus, which is a whole grain pasta with ground flax-seed.  Makes me feel a little better about eating carbs.

Lightly coat a pan with olive oil and add the sausage, cooking over medium heat.  Turn it mid-way through cooking.  When cooked through, transfer the sausage to a cutting board and let it rest 5 minutes before slicing.

While the sausage is cooking, cook the rotini to al dente.

Toss the pasta, sausage, pesto, a dribble of olive oil, and most of the parmesan together in a bowl.  Top with remaining parmesan.  Serve.

This is about a 30-minute dinner.  Enjoy!

    That looks delicious! I made plain ole spaghetti last week and no one was interested, I’ll have to switch it up with your recipe.

      There are more things you could do to it…for instance, saute some zucchini, that type of thing. My son will eat it…and he is not much of an eater.

  2. I have never tried the sun-dried tomato pesto…I’m a huge fan of regular pesto though so if you’re giving the sun-dried tomato one your seal of approval I’m going to have to get some!

      They have it at Walmart where you find the spaghetti sauce. It’s sooo good. It’s also good on sliced baguettes, too. I’ve served it that way for company.
